Rice Pancakes

What a great way to use leftover rice!
"saving money in the kitchen"

It's nourishing. Its delicious. It fills you up. It only takes five minutes to make from start to finish. It's crisp around the edges with the perfect balance of saltiness and sweetness in the centre. Yummy!

Ingredients

1.5 bowl cooked rice
3eggs
2tbsp sugar
Pinch of salt
2tbsp olive oil

pre heat a non stick pan over medium high heat. While the pan is warming, mix together the rice, egg, sugar, and salt in a bowl until well combined. Use a wooden spoon , scoop some rice mixture onto the hot pan. Smooth the ball of rice down until it is a circle and about half inch thick. The pancakes need to cook for about 2mins on each side to give the egg enough time to set and hold the rice together. Flipping them too fast or too many times will result in loose fried rice rather than rice pancakes. Plate the pancakes up when they are golden brown on both sides and solid in texture.
