Christmas French Butter Cookies

French pinwheel cookies and Shapes cookies. Sable , thick yet delicate and sandy textured cookies. It's delightful all year round buttery and light they will melt in your mouth. .Yummy! 

Ingredient 

2/3 cup buttersoftened 

3/4cup icing sugar 

1/2 tsp vanilla extract 

3 egg yolks 

2 1/2 cups cake flour

2tbsp cocoa powder melted in 4tsp hot water 

Add softened salted butter in a large mixing bowl and whisk , then sift icing sugar and vanilla extract and whisk to combine. Add in 3egg yolks one by one mixing homogenenously after each addition. Then sift in cake flour and fold until fine sands. Transfer only half the mixture onto a clean working surface and fraiser once. Then form a ball and flatten a little making a rectangular shape . Wrap and store in the fridge to make the dough set. In a small bowl add 2 tablespoon cocoa powder and 4 teaspoon of hot water then stir until combined. Pour the cocoa mixture into remaining cookie mixture and stir until mixed, then transfer to a working surface and fraiser until brown. Wrap the chocolate dough and store in the fridge for at lease 1 hr which will stabilize the flour and butter in the dough. Now roll out the vanilla dough and chocolate dough as well and place the vanilla sheet over the chocolate and trim a little to make rectangular shape. Then roll tightly all the way up just like you make sushi rolls. Wrap the roll and fridge for another 1hr . Slice into half inch thick and bake for 16mins at 180c, let cool on the pan for 3mins and carefully transfer on wire rack .
